If you%26#039;re using light cream, swirl in a bit of butter at the end, after you%26#039;ve taken it off the heat, to add a really nice mouth-feel.
A real basic guide to what herbs and seasonings go with which foods is in the back of many cookbooks; and the foodtv network site has lots of good info.
One thing you can do is search for recipes with the main ingredients you want to use, and see what the professionals have paired those same ingredients with. Reading cookbooks is one of my favorite past times!
Also, read seasoning blend labels. They%26#039;ve got the mixtures down pat in Italian seasoning, Mexican seasoning, lemon pepper (more than lemon and pepper!), etc. Get clues on what to mix and match from the bottles and jars.
There are classic pairings such as lemon and dill, coffee and chocolate, citrus and mint...the list goes forever...but the main guideline should always be what you like. Don%26#039;t be afraid to experiment; just don%26#039;t go hog wild and add 6 or 8 herbs at one time. Work on 2 or 3 to taste, and let your good taste be your guide.

Try this sauce:
2 scallions, whites and greens, very finely chopped
1/2 cup dry white wine - eyeball it
4 tablespoons heavy cream
1 stick cold butter, cut into pieces
Combine the scallions, white wine and 2 tablespoons cream in a saucepan over medium heat and reduce to 1/4 cup liquid, 5 to 6 minutes.
Whisk 2 tablespoons cream into the sauce, a splash. Lower the heat on the sauce and whisk the butter into pot until it has incorporated.
