I know that pistachios are sorta kinda greenish, but I think whoever developed pistachio ice cream went a little overboard.|||I%26#039;ve made homemade pistachio ice cream, pureeing the pistachios in a blender, and it was basically a cream color - only the very lightest hint of green. Others have found that it turns a light green. It depends on the pistachios you use, apparently.
However, when you%26#039;re putting flavored ice cream out in a display, like at an ice cream shop such as Baskin %26amp; Robbins, you need to be able to identify it by sight. Eighteen different %26quot;white%26quot; ice creams just don%26#039;t look interesting. Since pistachios ARE green, that%26#039;s the color they added. That%26#039;s what people expect when they buy pistachio ice cream, so most manufacturers still add the green coloring.
By the way, homemade is WAY better.|||i think that when you puree the nut oil comes out and intensifies the colour that%26#039;s just my opinion not fact . but how green is it where you come from i ve not seen it really dark . i live in Scotland UK|||No way!
